I have always been fascinated by the smell of truffles since I was a child…I used to go to find them with my grandmother and her dog Stellina. When I was 14 years old I got the licence to find truffles and I was one of the youngest truffle hunters in the countryside of Tuscany. During the years of University looking for truffles was a way to relax from the study.
Over the years I supported the philosophy of the organic, slow and quality products.
Since I have visited lots of places in the world, I really appreciate the culinary differences and I try to recognize in each of them the sense of “eating well”… the answer to my exploration was a return to the origins: there is nothing that can give me more satisfaction than going out with dogs into the wild, finding a truffle and bringing it directly on the table of my friends, gourmet or in a famous restaurant.
