Ingredients
  1. - Potato tortelli
  2. - Black truffle
  3. - Extra virgin olive oil
  4. - Garlic
  5. - Salt
  6. - Pepper
  7. - Parmesan (optional)
Instructions
  1. Wash and brush the truffle with cool water
  2. Scrape off the harder rind (if unwelcome)
  3. Grind ¾ of the truffle and cut the rest of it into thin slices (to slice the truffle use a truffle-slicer or a peeler)
  4. Put in a saucepan the truffles, extra virgin olive oil, a clove of garlic and season with salt and pepper. Cook all together for a few minutes
  5. In the meantime cook the ravioli. When they are ready, give flavour to pasta with this truffle-sauce and add parmesan (if you like)
Notes
  1. This recipe can also be combined with other types of pasta (gnocchi, ricotta cheese & spinach ravioli or fresh pasta). We recommend using the potato ravioli as the potatoes incorporate the truffle aroma, thus the result obtained is excellent.
