Potato Ravioli with Black Truffle

Ingredients
- - Potato tortelli
- - Black truffle
- - Extra virgin olive oil
- - Garlic
- - Salt
- - Pepper
- - Parmesan (optional)
Instructions
- Wash and brush the truffle with cool water
- Scrape off the harder rind (if unwelcome)
- Grind ¾ of the truffle and cut the rest of it into thin slices (to slice the truffle use a truffle-slicer or a peeler)
- Put in a saucepan the truffles, extra virgin olive oil, a clove of garlic and season with salt and pepper. Cook all together for a few minutes
- In the meantime cook the ravioli. When they are ready, give flavour to pasta with this truffle-sauce and add parmesan (if you like)
Notes
- This recipe can also be combined with other types of pasta (gnocchi, ricotta cheese & spinach ravioli or fresh pasta). We recommend using the potato ravioli as the potatoes incorporate the truffle aroma, thus the result obtained is excellent.
